📍 Ballard Gets Three New Kitchens and Bars

Ballard is carrying most of this fall's action. GoodMart, a seafood market and counter-service spot from the team behind Local Tide, is going into 5130 Ballard Ave NW on the old-town stretch. Local food writers expect fish to lead the menu, which means counter staff who can talk seafood and prep cooks who can break it down.

Up the hill at 2016 NW Market St, Kangaroo & Kiwi owner Bradley Howe is turning the former Shingletown Saloon into Country Roads, a country bar built around live music and line-dancing nights. KIRO 7 reported an October target this summer; more recent coverage calls it late fall. A music-heavy bar leans on bartenders, barbacks and door staff more than on a kitchen crew.

Also headed to Ballard: Cairo, an Egyptian restaurant from Tacoma caterer Om Eldonia, taking over the former Strega space. Seattle Met reported it as coming soon, with late-night hours planned. Late nights mean a second shift, and that's worth knowing if you're stacking a restaurant job around a day gig.

☕ Wallingford: Janta by Spice Waala

Spice Waala co-owners Uttam Mukherjee and Aakanksha Sinha are opening Janta at 1705 N 45th St, the former Fuel Coffee space near the heart of Wallingford's 45th Street strip. The name translates to "People's Cafe," and the plan is chai, coffee, Indian pastries and egg sandwiches. My Ballard reported in late August that final inspections were underway, and later coverage pointed to a late-September opening. Cafe openings like this one usually hire baristas, counter staff and bakers, and they usually hire fast.

🍺 Across the Lake: Willie Burton's Food Hall in Bellevue

On 116th Avenue NE in Bellevue's Wilburton neighborhood, next to the Eastrail corridor, Willie Burton's Food Hall is a 5,000-square-foot hall with a 100-seat patio, a beer garden and a bar built out of shipping containers. Tenants include Lil' Woody's, in its first Eastside location, plus two counters from James Beard Award-winning chef Brady Ishiwata Williams of Tomo. It was first slated for mid-summer, and as of this month it was still listed as opening any day now.

That's a lot of positions in one building: line cooks for three counters, bartenders, and front-of-house staff to keep a big patio moving. It's also the first piece of a much larger Wilburton development, so this probably won't be the last hiring push on that block.

💵 What It Pays, and Why the Address Matters

Where you clock in decides your legal floor. Seattle's minimum wage is $21.30 an hour in 2026, per the city's Office of Labor Standards, and that covers the Ballard and Wallingford spots above. Seattle's number doesn't cross Lake Washington, though. At a Bellevue address, the floor is Washington's statewide $17.13 unless a local rule sets it higher, so ask about pay before you accept.

Two more things to know. Washington doesn't let employers count tips toward the minimum wage, so servers and bartenders earn the full hourly rate before tips. And the legal floor is where pay starts, not where it ends. Experienced line cooks and bartenders in this market regularly get offers above it, so ask what the posted range is.
